Delicious Cheese Kurkure by Navtej Kohli

Here is one very cool recipe for all the vegetarians. As the name suggests it is very healthy and easy to cook. So, next time if you are hungry and don’t have ample time to cook grab these munchies. 

Cheese Kurkure 

Serves: 4
Style: Indian Vegetarian

2  tablespoon(s) grated cheese
½ cup(s) milk
2  small onion(s) finely chopped
2  green chilli(es) chopped fine
1  teaspoon(s) ginger finely chopped
8  bread slices
1  tablespoon(s) finely chopped coriander leaves
oil for deep frying
salt to taste

Mix milk, grated cheese, chopped onions, green chilli(es), ginger, coriander leaves and salt nicely. 
Put the mixture on to each bread slice and roll it tight.
Heat the oil for deep frying on high flame. Drop in the rolls slowly. Reduce the heat and fry on medium flame stirring frequently till the rolls are crisp and light brown in color. Drain on a paper towel.
Serve hot with: Green Chutney (Hari Chutney) and tomato ketchup

The Indian Premier League series is just around the corner and every one of you can now be a part of it, or rather more. You can own, control and play for nothing what the big bosses in the IPL have paid hefty sums of money for.
If you’re a cricket lover, then in all possibility you’re going to love this first season of IPL. While some believe it’s a history in the making, I personally believe that success of IPL hinge on the after-match reactions of Indian masses.

The IPL 2008 is a lot like fantasy cricket in that the players are being bought and sold at a price to play in the league. Big wigs from the Indian film industry are endorsing their favorite teams. Moreover, with such high stakes involved it is surely the most awaited event of the year.

For the first time in Indian cricket history, IPL brings together players from all over the world. This is an added USP that multiplies the charm of IPL.

Cricket has seen a lot of changes in the recent past. After the hands down success of 20-twenty format, people have many expectations from IPL. These new trends in cricket are likely to risk the traditional formats, especially test matches which might take a backseat.

But certainly this action packed series is going to be a great experience!

Making sugar-free American Apple-pie with Navtej Kohli

Navtej Kohli brings one more delectable, quick-to-cook sugar free recipe for all you gourmands. This time, Navtej Kohli shares the recipe of his all time favorite tooth sweetener American Apple pie.

Cook, eat and stay healthy…

For pastry, you need:

• 2 cups sifted flour
• 1 teaspoon salt
• 2/3 cup shortening
• 4 tablespoons ice water

For Filling, you need:

• 6 large, tart apples
• 3/4 cup granulated sugar substitute
• 2 tablespoons flour
• 1/2 teaspoon cinnamon
• 1/8 teaspoon nutmeg
• 1/8 teaspoon salt
• 2 tablespoons butter

Preheat oven to 400 degrees Celsius.

Combine flour and the salt into a bowl. Cut in half the shortening with two knives or a pastry blender until the mixture resembles coarse meal. Cut in the remaining shortening until the size of small peas.
With the help of a fork, stir in just enough ice water to bind the crumbly mixture together. Dough will ball and follow the fork around the bowl. Turn the dough out on a floured board and roll out half to fit a 9-inch pie plate. Put the dough in the plate.
In a bowl, stir the sugar substitute with the two tablespoons of flour, cinnamon, nutmeg, and one-eighth teaspoon salt, mixing well.
Wash, dry, peel, core, and quarter the apples. Then slice the fruit and add it to the sugar mixture. Mix well. Transfer the fruit to the pastry-lined pie plate. Dot the fruit with the two tablespoons of butter.
Roll out the remaining dough. Slash the pastry to allow the vent. Or, if you prefer, cut the dough into one-inch strips of pastry and weave for a lattice top. Either way, place the pastry on top of the pie, and press firmly around the edge. Bake it for about fifty minutes, or until the crust is nicely browned and the fruit is tender. Serve warm.
Your sugar free American apple pie is ready. Enjoy eating!
