INGREDIENTS

    * 2 cups whole wheat flour
    * 1 tablespoon baking powder
    * 1/2 teaspoon salt

    * 1 teaspoon ground cinnamon
    * 3/4 cup nonfat milk
    * 2 egg whites
    * 1/4 cup vegetable oil
    * 1/4 cup honey
    * 1 cup chopped apples

DIRECTIONS

   1. Preheat oven to 375 degrees F (190 degrees C). Lightly grease the muffin tin.
   2. Lightly beat egg whites.
   3. In a separate bowl mix dry ingredients properly.
   4. In a separate bowl, mix remaining ingredients. Gently
fold in egg white. Add to the dry ingredients. Stir until barely
moistened. Batter will be lumpy.
   5. Fill greased muffin tins two-thirds full. Bake about 20 minutes until lightly browned.

When done enjoy then with a nice cup of coffee!
